Ingredients:
- 2 large eggs
- 2 oz cream cheese
- 1 tbsp almond flour
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1-2 tbsp erythritol or your preferred keto-friendly sweetener
- A pinch of salt
- Butter or coconut oil for cooking
Instructions:
Add the eggs, cream cheese, almond flour, baking powder, vanilla extract, erythritol, and a pinch of salt to a blender
Blend until smooth
Mix the batter well and until it is smooth
Put a nonstick skillet or griddle over medium-low heat and add a little butter or coconut oil to coat the bottom
Put 1/4 cup of the pancake mix on the hot pan to make a pancake
If your skillet lets you, you can make more than one pancake at the same time
For two to three minutes on each side, or until golden brown and set in the middle, remove from the heat
Take the pancakes out of the pan and do it again with the rest of the batter
If you want to keep the carbs low, you can top the pancakes with sugar-free maple syrup, berries, or whipped cream
