Rocky Road Cookies

These Rocky Road Cookies are a delicious twist on the traditional rocky road flavor. These cookies are the perfect combination of chewy, crunchy, and gooey goodness, thanks to the addition of walnuts, mini marshmallows, and chocolate chips.

Ingredients:

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 1 cup mini marshmallows
  • 1 cup semisweet chocolate chips

Instructions:

Warm your oven up to 350F 175C and put parchment paper on baking sheets

Melt the butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy

One at a time, add the eggs and beat well after each one

Add the vanilla extract and mix well

Mix the cocoa powder, baking soda, salt, and flour together in a different bowl using a whisk

Slowly add the dry ingredients to the wet ones and mix them together until they are just combined

Chop the walnuts and add them along with the mini marshmallows and chocolate chips

Place round tablespoons of dough about 2 inches apart on the baking sheets that have been prepared

After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are set but the middle is still a little soft

Take the cookies out of the oven and let them cool for a few minutes on the baking sheets

Then, move them to wire racks to cool completely

With milk or your favorite hot drink, these Rocky Road Cookies are a great treat

Ingredients:

  • 1 pizza dough
  • 1/2 cup tomato sauce
  • 1 1/2 cups mozzarella cheese, shredded

  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

Preheat your oven to 475F 245C

Roll out the pizza dough on a floured surface to your desired thickness

Transfer the dough to a pizza stone or baking sheet

Spread the tomato sauce evenly over the dough, leaving a small border around the edges for the crust

Sprinkle the shredded mozzarella cheese evenly over the sauce

Tear fresh basil leaves and scatter them over the cheese

Drizzle olive oil over the top and season with salt and pepper

Bake in the preheated oven for 10-12 minutes or until the crust is golden and the cheese is bubbly and slightly browned

Remove from the oven and let it cool for a minute before slicing

Serve hot and enjoy

Ingredients:

  • 500g large prawns, peeled and deveined
  • 500g fresh mussels, cleaned and debearded
  • 500g squid tubes, cleaned and sliced into rings
  • 300g cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 lemon, zest and juice
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

Warm the oven up to 390F 200C

Put prawns, mussels, squid rings, cherry tomatoes, red onion, garlic, olive oil, balsamic vinegar, lemon zest, lemon juice, salt, and pepper in a large bowl

Toss until everything is well mixed

Move the seafood mix to a large baking dish and spread it out evenly

Before putting the dish in the oven, heat it up and roast it for 15 to 20 minutes, or until the seafood is cooked through and the tomatoes are soft and toasty

Take it out of the oven when its done and sprinkle chopped parsley on top

Serve hot over cooked pasta or with crusty bread

  • 5 oz full-fat coconut milk
  • 4 cups vegetable broth
  • 1 package 14 oz firm tofu, drained and cubed
  • 1 cup sliced mushrooms
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons grated ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons lime juice
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 1 teaspoon chili flakes optional
  • Salt and pepper to taste
  • Fresh cilantro leaves, for garnish
  • Sliced green onions, for garnish

Instructions:

In a slow cooker, combine coconut milk, vegetable broth, tofu, mushrooms, bell pepper, garlic, ginger, soy sauce, maple syrup, lime juice, lemongrass stalks, kaffir lime leaves, and chili flakes if using

Season with salt and pepper to taste

Cover and cook on low for 4-6 hours or until flavors meld and vegetables are tender

Before serving, remove lemongrass stalks and kaffir lime leaves

Serve hot, garnished with fresh cilantro leaves and sliced green onions
