Ingredients:
- 1 cup frozen sweet peas, thawed
- 1/2 cup diced carrots
- 2 cloves garlic, minced
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 tsp sesame oil
- 1 tsp low-sodium soy sauce
- 1/2 tsp ginger, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 20 round dumpling wrappers
- 1 tbsp olive oil for cooking
Instructions:
In a food processor, combine sweet peas, carrots, garlic, green onions, cilantro, sesame oil, soy sauce, ginger, salt, and black pepper
Pulse until the mixture is finely chopped and well combined
Place a dumpling wrapper on a clean surface
Add 1 tablespoon of the pea and vegetable mixture to the center of the wrapper
Dip your finger in water and moisten the edges of the wrapper
Fold the wrapper in half and press the edges to seal, creating a half-moon shape
Repeat with the remaining wrappers and filling
Heat olive oil in a non-stick skillet over medium heat
Add the dumplings in a single layer and cook until the bottoms are golden brown, about 2-3 minutes
Carefully add 1/4 cup of water to the skillet and cover immediately
Steam the dumplings for about 3-4 minutes or until they become translucent
Remove the cover and continue to cook until the water has evaporated, and the dumplings are crispy on the bottom
Serve the healthy sweet pea dumplings hot with your favorite dipping sauce
