Ingredients:
- 500g large prawns, peeled and deveined
- 500g fresh mussels, cleaned and debearded
- 500g squid tubes, cleaned and sliced into rings
- 300g cherry tomatoes, halved
- 1 red onion, thinly sliced
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 lemon, zest and juice
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
Warm the oven up to 390F 200C
Put prawns, mussels, squid rings, cherry tomatoes, red onion, garlic, olive oil, balsamic vinegar, lemon zest, lemon juice, salt, and pepper in a large bowl
Toss until everything is well mixed
Move the seafood mix to a large baking dish and spread it out evenly
Before putting the dish in the oven, heat it up and roast it for 15 to 20 minutes, or until the seafood is cooked through and the tomatoes are soft and toasty
Take it out of the oven when its done and sprinkle chopped parsley on top
Serve hot over cooked pasta or with crusty bread
