Ingredients:
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 2 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups buttermilk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mixed berries strawberries, blueberries, and raspberries
- 1/2 cup fresh strawberries, sliced for garnish
- 1/2 cup fresh blueberries for garnish
Instructions:
In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt
In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Gently fold in the mixed berries
Preheat your waffle iron according to the manufacturers instructions and lightly grease it with cooking spray or oil
Pour the waffle batter onto the preheated waffle iron and cook according to your waffle makers instructions until they are golden brown and crispy
While the waffles are cooking, prepare the strawberry blueberry syrup
You can do this by combining 1 cup of sliced strawberries and 1/2 cup of blueberries in a saucepan
Cook over medium heat until the berries start to break down and release their juices
Use a fork or potato masher to mash the berries and simmer for about 5 minutes until the mixture thickens slightly
Serve the warm waffles topped with the strawberry blueberry syrup and garnish with fresh strawberry slices and blueberries
