Ingredients:
- 1 1/2 cups whole wheat flour
- 1/2 cup shredded coconut
- 1/2 cup chocolate chips
- 1/2 cup mashed bananas about 2 ripe bananas
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with paper liners
In a large bowl, combine the whole wheat flour, shredded coconut, chocolate chips, baking powder, baking soda, and salt
In another bowl, mash the ripe bananas and mix them with honey or maple syrup, melted coconut oil, almond milk, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; the batter should be lumpy
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean
Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely
