Beet Salad

This beet salad is a vibrant and nutritious dish thats perfect for promoting a healthy lifestyle. Beets are rich in vitamins and antioxidants, while the addition of fresh parsley, feta cheese, and walnuts adds flavor and texture to the salad. The balsamic vinaigrette dressing ties everything together for a refreshing and satisfying meal.

Ingredients:

  • 3 medium beets, roasted and diced
  • 1/2 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

For about 45 minutes, or until they are soft when poked with a fork, roast the beets in the oven at 400F 200C

After the beets are cool, peel them and cut them into small pieces

Diced beets, chopped parsley, crumbled feta cheese, and chopped walnuts should all be put in a large bowl together

To make the dressing, mix the extra-virgin olive oil and balsamic vinegar in a small bowl with a whisk

Pour the dressing over the salad and mix it all together

Add salt and pepper to the salad as needed

You can serve the beet salad cold or in a warm bowl
