Ingredients:
- 3 medium beets, roasted and diced
- 1/2 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts

- Salt and pepper to taste
Instructions:
For about 45 minutes, or until they are soft when poked with a fork, roast the beets in the oven at 400F 200C
After the beets are cool, peel them and cut them into small pieces
