Gluten-Free Spatchcock BBQ Chicken

This gluten-free spatchcock BBQ chicken is juicy, flavorful, and perfect for a family barbecue. Spatchcocking the chicken helps it cook faster and more evenly on the grill, while the homemade spice rub and gluten-free BBQ sauce add layers of delicious flavor.

Ingredients:

  • 1 whole chicken, spatchcocked backbone removed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 cup gluten-free BBQ sauce

Instructions:

Preheat the grill to medium-high heat

In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper

Rub the spice mixture all over the spatchcocked chicken, making sure to coat it evenly

Place the chicken on the preheated grill, skin side down

Grill for about 10-12 minutes on each side, or until the internal temperature reaches 165F 75C

During the last 5 minutes of grilling, brush the chicken generously with gluten-free BBQ sauce

Remove the chicken from the grill and let it rest for a few minutes before serving

Slice and serve hot, optionally with additional BBQ sauce on the side
