Ingredients:
- 1 whole beef brisket 10-12 pounds
- 1/4 cup kosher salt
- 1/4 cup black pepper
- 1/4 cup paprika
- 1/4 cup brown sugar
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- Wood chips for smoking
- Original BBQ sauce
Instructions:
Trim excess fat from the brisket, leaving about 1/4 inch
Combine kosher salt, black pepper, paprika, brown sugar, chili powder, garlic powder, onion powder, and cayenne pepper to create a dry rub
Rub the dry mixture generously over the brisket, covering all sides
Let it sit for at least 1 hour or overnight for better flavor penetration
Prepare the smoker with wood chips according to the manufacturers instructions and preheat to 225F 107C
Place the brisket on the smoker grates and smoke for approximately 1
5 hours per pound or until the internal temperature reaches 200F 93C
Baste the brisket with Original BBQ sauce during the last hour of smoking
Once done, remove the brisket from the smoker, tent it with foil, and let it rest for 30 minutes before slicing
Slice the brisket against the grain and serve with additional BBQ sauce on the side
