Ingredients:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Red food coloring
- Black food coloring
- White chocolate chips or candy melts
Instructions:
In a medium bowl, whisk together the flour, baking powder, and salt
Set aside
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms
Divide the dough into two portions
Leave one portion as is, and add red food coloring to the other portion, kneading until the color is uniform
Wrap both portions of dough in plastic wrap and refrigerate for at least 1 hour
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Take a small amount of red dough and roll it into a thin rope
Do the same with the plain dough
Twist the two ropes together and form a headband shape on the baking sheet
Roll small balls of red dough and flatten them slightly to create the ear shapes
Place them on the headband shape
Bake the cookies in the preheated oven for about 10-12 minutes, or until the edges are lightly golden
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Melt the white chocolate chips or candy melts according to the package instructions
Using black food coloring, tint a small portion of the melted white chocolate to create the outlines of Minnies ears and facial features
Once the cookies are fully cooled, use the tinted chocolate to draw Minnies ears and facial features on the headband cookies
Allow the chocolate to set before serving or storing
