The California Spaghetti Salad is a tasty mix of pasta, fresh vegetables, and a tangy dressing. Its great for potlucks, picnics, or as a cool side dish with any meal.
Ingredients:
- 8 ounces spaghetti, cooked and cooled
- 1 pint cherry tomatoes, halved
- 1 large cucumber, diced
- 1 red bell pepper, diced
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup Italian dressing
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions:
Add the cooked spaghetti, cherry tomatoes, cucumber, bell pepper, black olives, red onion, and parsley to a large bowl
Toss the salad gently to coat all the ingredients with the Italian dressing
Grate some Parmesan cheese on top, and add salt and black pepper to taste
Put it in the fridge for at least an hour before serving so the flavors can mix
