Ingredients:
- 4 whole wheat pita bread rounds
- 1 cup kale leaves, washed and chopped
- 1/2 cup pistachios, shelled and roasted
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- Fresh basil leaves for garnish
Instructions:
Preheat your oven to 400F 200C
In a food processor, combine kale, roasted pistachios, grated Parmesan cheese, minced garlic, and olive oil
Blend until you have a smooth pesto sauce
Season with salt and pepper to taste
Place the whole wheat pita bread rounds on a baking sheet
Spread the pistachiokale pesto evenly on each pita bread
Sprinkle crumbled feta cheese over the pesto-covered pitas
Add halved cherry tomatoes and thinly sliced red onion on top of the cheese
Bake in the preheated oven for about 10-12 minutes or until the edges of the pita bread are crispy and the toppings are slightly golden
Remove from the oven and garnish with fresh basil leaves
Slice the pita pizzas and serve hot
