This Vegan Dijon Potato Salad with Peas and Herbs is a tasty and refreshing dish thats great for any event, like a picnic or a barbecue. The soft potatoes and bright peas go well with the creamy vegan mayo and tangy Dijon mustard dressing. Fresh herbs give the salad a burst of freshness.
Ingredients:
- 1 1/2 lbs small red potatoes, halved or quartered
- 1 cup frozen peas, thawed
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh dill
- 2 green onions, thinly sliced
- 1/4 cup vegan mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions:
Boil the potatoes in a big pot for about 10 to 15 minutes, or until they are soft
Let it drain and cool down a bit
Put the cooked potatoes, peas, parsley, dill, and green onions in a large bowl
Put the vegan mayonnaise, Dijon mustard, and apple cider vinegar in a small bowl and mix them together with a whisk
Add the dressing to the potatoes and mix them around to make sure they are well covered
Add pepper and salt to taste
