A delightful fusion of egg curry and soup, perfect to serve over steamed rice or with flatbreads. Its hearty, flavorful, and sure to warm you up on chilly days
Ingredients:
- 4 eggs
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 green chili, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 2 cups chicken or vegetable broth
- 1/4 cup coconut milk
- 2 tablespoons oil
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions:
After the eggs are hard-boiled, peel them and set them aside
Set a pot on medium heat and add the oil
Put in the cumin seeds and let them pop
Put in the chopped onions and cook until they turn golden brown
Put in chopped green chili, grated ginger, and garlic that has been minced
Put it on for two minutes
Put in the chopped tomatoes and cook them until they get soft
Add the salt, turmeric powder, red chili powder, and coriander powder and mix them in
Go on and cook for two more minutes
Put in chicken or vegetable broth and raise the heat
Put the boiled eggs in the pot slowly and let it cook for 5 minutes
Add the garam masala and coconut milk and mix well
Keep cooking for two more minutes
Before serving, sprinkle with fresh cilantro leaves
