  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 cup sliced radishes
  • 1/4 cup sliced black olives
  • For the pickled red onions:
  • 1 red onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 1 tablespoon maple syrup
  • 1 teaspoon salt
  • For the basil ranch dressing:
  • 1/2 cup vegan mayonnaise
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions:

Apple cider vinegar, water, maple syrup, and salt should all be mixed together in a small saucepan

Bring up the temperature

Put the red onions slices in the pan and let them cook for one to two minutes

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup arrowroot flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 2 eggs
  • 1/4 cup apple cider
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • Coconut oil for greasing the doughnut pan
  • Cinnamon sugar optional, for coating

Instructions:

Preheat your oven to 350F 175C and grease a doughnut pan with coconut oil

In a large bowl, whisk together the almond flour, coconut flour, arrowroot flour, baking soda, cinnamon, nutmeg, and salt

In a separate bowl, mix together the applesauce, maple syrup, eggs, apple cider, melted coconut oil, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until well combined

Spoon the batter into the prepared doughnut pan, filling each mold about 3/4 full

Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into a doughnut comes out clean
